Vinegar has been produced in Modena since ancient times, using various recipes, manufacturing methods and ageing processes. A tradition started with Romans and transmitted until nowadays, transforming Balsamic Vinegar into a gourmet product known and appreciated all over the world and protected by quality denomination P.D.O. (Protected Designation of Origin) and P.G.I. (Protected Geographical Indication).
Our company produces both Traditional Balsamic Vinegar of Modena P.D.O. and high quality Balsamic Vinegar of Modena P.G.I. To produce it we follow the traditional method and only use grapes grown in the province of Modena, some of them organic.
